Maasdam was developed in the Netherlands in the 1980s as an alternative for Swiss Emmental. This modern, creamy, semi-hard cheese with holes is made from pasteurised cow’s milk. Maasdam has a mild, sweetish nutty flavour, which increases as the cheese ripens.

In the Netherlands, labelling usually indicates the fat content in the dry matter: this remains the same as the cheese ages, while the absolute fat content increases because riper cheese contains less moisture.
In its original shape, Maasdam is wheel shaped, but it is now also made in rectangular blocks.
