Although you might think so from the name of this German cheese, there is no butter in Butterkäse. Because of its 45% fat content, however, it does have a buttery flavour and is mild and aromatic. The cheese melts in the mouth. It is a semi-hard cheese with a yellow colour. The cheese is easily sliced or diced.

In the Netherlands, labelling usually indicates the fat content in the dry matter: this remains the same as the cheese ages, while the absolute fat content increases because riper cheese contains less moisture.
