Dutch Goat’s cheese is a semi-hard cheese of the same type as Gouda. It is growing rapidly in popularity, in particular because it is suitable for people who are allergic cow’s milk. The fatty acid molecules in goat’s milk are smaller than in cow’s milk, making the cheese more easily digestible. Goat’s cheese is whiter in colour than cheese made from cow’s milk. This is because goats convert any caroten (which contains an orange colouring) in their food into vitamin A in their digestive tract. The goat’s milk produces a highly specific, distinctive flavour. The aging process takes much less time than for cheese made from cow’s milk.

In the Netherlands, labelling usually indicates the fat content in the dry matter: this remains the same as the cheese ages, while the absolute fat content increases because riper cheese contains less moisture.
