Light cheese

For a number of cheeses ­– Gouda, Edam, Maasdam and Mozzarella – we supply a ‘light’ version. The cheese is produced with a lower fat content, both 20+ and 30+. Low salt varieties are also possible.

Fat in dry matter : min. 20%
Fat absolut : ca. 11%
This cheese therefore contains 50% less fat compared to full fat cheese!

Light cheese 30+

Fat in dry matter : min. 30%
Fat absolut : ca. 16%
This cheese therefore contains 50% less fat compared to full fat cheese!

In the Netherlands, labelling usually indicates the fat content in the dry matter: this remains the same as the cheese ages, while the absolute fat content increases because riper cheese contains less moisture.
