Manchego is an exclusive PDO cheese (Protected Designation of Origin) from Spain, made in the region La Mancha to be exact. The cheese is made exclusively from milk from the Manchega sheep, which gives its unique and special taste.
Pasteurised sheep’s milk, salt, starter, rennet.
Fat in dry matter : min. 50%
Fat absolut : ca. 30%
In the Netherlands, labelling usually indicates the fat content in the dry matter: this remains the same as the cheese ages, while the absolute fat content increases because riper cheese contains less moisture.
