Mimolette is a type of cheese originally produced in the region of Lille, France, but also in Belgium and the Netherlands. The cheese was developed at the request of Louis XIV, who wanted a cheese that was similar to Edam. However, he had the cheese coloured orange. The original ball-shaped Mimolette is often ripened for a long time, which changes the flavour from mild to strong and distinctive. Mimolette cheese in film, as supplied by Vepo Cheese, is young with a mild flavour like Edam.

In the Netherlands, labelling usually indicates the fat content in the dry matter: this remains the same as the cheese ages, while the absolute fat content increases because riper cheese contains less moisture.
Edam is famous as a small round cheese. For many years it has also been produced in blocks.
