Monterey Jack is an American semi-hard cheese. It originates from cheese introduced in the 1700s by Spanish missionaries in Monterey, California. Businessman David Jack was the first person to market the cheese commercially. It was first known as ‘Jack’s Cheese’, eventually becoming Monterey Jack. It is a mild, white cheese with a slightly sour flavour.

In the Netherlands, labelling usually indicates the fat content in the dry matter: this remains the same as the cheese ages, while the absolute fat content increases because riper cheese contains less moisture.
