Havarti is a semi-hard Danish cheese named after the farm of Hanne Nielsen, the woman who developed the cheese in the mid-19th century, north of Copenhagen. It is a pliable, creamy cheese, with many small ‘eyes’, and a creamy yellow colour. The flavour is usually buttery and slightly sweet, growing stronger as the cheese matures. Havarti is commonly used in sandwiches, both cold and hot. It has excellent melting qualities.

Fat absolut : ca. 26%
In the Netherlands, labelling usually indicates the fat content in the dry matter: this remains the same as the cheese ages, while the absolute fat content increases because riper cheese contains less moisture.
